What's coming to the spring menu

Spring brings back Strawberry Fields Forever, Blood Orange Espresso Tonic, Liquid Jade, Mood Ring, and Bee Keeper to the Syndicate menu.

Spring changes the rhythm of the counter. The days stretch out, lunch wanders a little later, and cold cups begin appearing beside the pastry case again. Our menu responds in kind.

Seasonal rotation gives us room to follow what tastes right now. Some drinks belong to darker afternoons and slower mornings. Others want citrus, ice, bright color, and the small thrill of condensation running down a glass.

This spring, Strawberry Fields Forever, the Blood Orange Espresso Tonic, Liquid Jade, Mood Ring, and Bee Keeper are returning to the cast. They each bring something different, but they share a certain spring disposition: lively, layered, and ready to wake up your usual order. If you have been waiting for a favorite, your patience is about to pay off.

We name drinks like other people name racehorses. There is drama. There is confidence. Occasionally, there is a name that sounds completely reasonable until someone has to call it across a busy room.

The Blood Orange Espresso Tonic is especially glad to be back. It starts with the crisp bitterness and fizz of tonic, then adds blood orange for a rounded citrus note that is more complex than simple sweetness. Espresso lands on top, aromatic and dark, making the whole drink shift as you sip.

At first, you get fragrant coffee and a little sparkle. As the layers mingle, the orange draws out the espresso’s fruitier side while the tonic keeps the finish clean. It is refreshing without pretending coffee has suddenly become juice, an important boundary for all of us.

It is also a drink that rewards a moment of patience. Let the espresso settle slightly, give the glass a gentle stir, and taste how the balance changes. The last few sips are often the best ones.

Strawberry Fields Forever brings its own kind of brightness. The name gives you a useful clue, but the pleasure is in how familiar strawberry can feel fresh again when it meets a well-built coffee-shop drink. It is playful, but not careless.

Mood Ring returns for anyone who prefers a drink with a little mystery around the edges. Bee Keeper has the same recognizable house spirit: a name you remember and a flavor profile designed to hold your attention past the first sip. These are not drinks built only for a quick photograph, though they are not exactly shy.

Then there is the matcha situation.

Liquid Jade is returning, and that means the green-drink regulars can relax. Matcha asks for care because texture matters as much as flavor. It needs to be measured, whisked thoroughly, and given enough attention to become smooth rather than chalky or clumped.

Good matcha has a savory, grassy depth beneath its gentler notes. Preparation brings those qualities into balance, especially in a drink meant to be enjoyed slowly. We take that part seriously, even when the resulting cup looks almost suspiciously cheerful.

Seasonal rotation is not about changing everything for the sake of novelty. The Cortado still has work to do. So do the Flat White, Cold Brew, Pour Over, and Aerated Americano, along with the familiar personalities of Plain Jane, Scott, Brett, Cafe Noir, and Coconut Head.

Instead, the spring drinks widen the possibilities. Maybe your dependable order stays exactly where it is, and you try something new on a second visit. Maybe the first warm afternoon settles the matter for you and an espresso tonic becomes the only sensible answer.

The bakery and kitchen follow that same daily rhythm. A Butter Croissant can sit happily beside something bright and iced. A Morning Bun works when breakfast begins promptly, and Avocado Toast on house sourdough is there when the morning has quietly become lunch.
